December 4 - A Winter Christmas



In countries in the northern hemisphere, like England and Sweden, Christmas is a winter festival. In these countries developed all the traditions of rich cooking, lights and carol singing in the cold dark streets. Lights on Christmas trees and in windows, lanterns and candles are a delight of long dark evenings. The white berries on mistletoe and the red berries of holly used in these countries as Christmas decorations are not available in countries with a summer Christmas.

  • Do some baking...
White Christmas
  • Melt 250g copha and allow to cool
  • Combine: 
    • 3 cups Rice Bubbles
    • 1 cup dessicated coconut
    • 3/4 cup icing sugar
    • 1 cup powdered milk
    • 1/2 cup glace apricots
    • 1/2 cup glace pineapple
    • 1/4 cup glace cherries (red and green)
    • 1/2 cup sultanas
  • Add cooled copha and mix thoroughly
  • Press into lightly oiled and paper-lined lamington tin.
  • Refrigerate until firm
  • Cut into 2cm squares for serving.
